Not Design Related: Broccoli Pasta

One of my biggest downfalls is my meal planning (especially during the week). It's something I've been working on and trying to improve upon. I make a lot of our old favorites (tacos, chicken and wild rice casserole, stir-fry), but I also like trying new things that I hope are a hit - meaning all 3 of us like the dish.

I came across this broccoli pasta dish recently on the Smitten Kitchen blog and had to share it because not only is it a big hit but it's really easy to make.


And the best part is you're getting a healthy dose of vegetables in this dish. It's flavorful, delicious, and every time I've made it I wish I had doubled the recipe (next time, next time).

Something else I'd like to try is doing some chicken medallions with it next time too.

So that's a favorite meal in our house recently that I thought I'd share.

  3. Woah. That looks amazing. Because we're gluten free, I often will make a spaghetti squash to sub out for pasta and I think this dish would work so well with that. YUM!

  4. Just the recipe I've been searching for, but didn't know was out there! We eat a ton of broccoli, are pasta lovers, and are going more and more gluten free. This is perfect! The timing even better because I have a friend coming to visit who is gluten free, and I wasn't sure what fun meal to make. Thanks for sharing, Holly!
